Trade Secrets - Moules Mariniere ....
Here we are sharing the secrets to a great Moules MariniereYou will need
1lb of mussels(cleaned and de-bearded)
1 banana shallot
75cl dry white wine
2 cloves of garlic crushed
1/4 pt of guernsey cream
some crusty bread
1oz of guernsey butter
Hint
At Brown's we use a wok for the cooking of the mussels but a medium saucepan with a lid will do the job.
Let's start
Melt the butter and add the diced shallots, soften with no colour, add the mussels, garlic and white wine and cover. Steam till the mussels have opened around 4 to 5 mins. and then add the cream and allow to thicken slightly.
Serve with the crusty bread and a glass or two of Sauvignon Blanc. Enjoy because we know they always are at BROWN'S.
